Who said Raw Vegan Food is boring?
The Evason is an incredible resort, surrounded by nature and in a very relaxed area, which is actually hard to find in most of the touristic spots in Thailand. They also have their own garden that you can visit and where many of the ingredients for the Blue Lotus classes come from.
The Blue Lotus is a learning center for plant-based cooking where everybody can learn how to cook nutritious, healthy and delicious vegan food.
There are various classes that focus on different specialties: Taste of Southeast Asia, Pure Energy, Green Thai Cuisine, Power Bowls, Gluten-free pizza, Asian Sweets, and Raw Asia.
The team is led by the experienced French Chef Christophe Berg, who worked as plant-based chef and consultant all over the world, authored various recipe books, and is a passionate runner.
I decided to join the Raw Asia class because I never knew much about Raw vegan food, and I was intrigued by the Asian twist on it.
I had the pleasure to learn from Christophe, Khun Keng (his plating skills are incredible!) and the friendly Ivor, who taught how to properly treat my knife on the cutting board.
We worked on three different recipes: Nori Maki, Papaya Salad (or Som Tum), and Pad Thai.
I know it sounds crazy to talk about raw vegan Pad Thai and Nori Maki but the flavors are incredibly similar with an added layer of freshness.
My favorite was the raw vegan Nori Maki.
Instead of rice, we used pulsed Cauliflower and Carrot, mixed with lemon juice and ginger, strained to release the extra water and maintain the texture.
Then we used marinated oyster mushrooms (delicious!), cashew-based orange mayo, fresh cucumber, red bell pepper and spinach.
They were even able to teach me how to properly assemble and roll the Nori Maki, which is a big win since I’m pretty bad at rolled food in general.
I would definitely suggest a visit to the Blue Lotus, both for the great classes and the wonderful location. I learnt a lot and I will definitely come back to join other classes!
